Herb Butter Vegetables

This simple, flavourful dish incorporates a combination of seasonal vegetables, herbs, and the salty goodness of Cotswold Butter to enhance all the flavours. We picked up a selection of vegetables from our local farm shop.

Ingredients:

  • 4 Carrots
  • 2 Parsnips
  • 1 Butternut Squash
  • 4 Potatoes
  • 1 Cauliflower
  • 2 Onions
  • 1 pound Brussels Sprouts
  • 1/2 Cup Olive oil
  • 4 Garlic Cloves
  • Balsamic Vinegar
  • Thyme
  • Salt
  • Pepper

Instructions:

  • Preheat oven to 180°c.
  • Cut up all seasonal vegetables and place on a non stick tray.
  • Add Cotswold Butter, balsamic vinegar, garlic and thyme; season with salt and pepper, to taste. Gently toss to combine.
  • Place into oven and bake for 20 minutes.
  • Serve immediately.

Cotswold Butter enhances all the natural flavours of the vegetables.
