Herb Butter Vegetables
This simple, flavourful dish incorporates a combination of seasonal vegetables, herbs, and the salty goodness of Cotswold Butter to enhance all the flavours. We picked up a selection of vegetables from our local farm shop.
Ingredients:
- 4 Carrots
- 2 Parsnips
- 1 Butternut Squash
- 4 Potatoes
- 1 Cauliflower
- 2 Onions
- 1 pound Brussels Sprouts
- 1/2 Cup Olive oil
- 4 Garlic Cloves
- Balsamic Vinegar
- Thyme
- Salt
- Pepper
Instructions:

Preheat oven to 180°c.
- Cut up all seasonal vegetables and place on a non stick tray.

Add Cotswold Butter, balsamic vinegar, garlic and thyme; season with salt and pepper, to taste. Gently toss to combine.

Place into oven and bake for 20 minutes.

Serve immediately.
