Buttered Asparagus & Lemon Sole

Our buttered asparagus and lemon sole recipe is a simple recipe with not many steps but it is sure to please your taste buds with tantalising elements of sole, lemon, asparagus, garlic and capers.

Ingredients:

(2 Servings)

  • 3 tablespoons Cotswold Butter
  • 2 sole fillets
  • 1 tablespoon olive oil
  • 2 garlic cloves
  • 1 tablespoons of lemon juice
  • 2 lemon slices to garnish
  • 1 bunch of asparagus
  • 1 tablespoon of capers
  • Pepper to taste

Method:

  1. Preheat your oven to 180°C.
  2. In a small bowl add in your minced garlic, Cotswold Butter, lemon juice, and mix well.
  3. On a baking tray lay down your sole fillets and asparagus and pour over the sauce you have just made in step two so that everything is thoroughly coated in the sauce
  4. Once your oven has reached 180°C, place the baking tray in the oven, and cook the fish and asparagus for 12-14 minutes until the fish is cooked.
  5. While the sole and asparagus are in the oven, take your capers and add them to a pan with olive oil and cook for 3 to 5 minutes until the capers have split open. Once cooked put them in a bowl or on paper towels to rest.
  6. A few minutes before the sole fillets are finished cooking add your lemon slices on top of the sole fillets.
  7. Once cooked, take the baking tray out of the oven and place the sole fillets, lemon slices, and asparagus on a plate and garnish with the cooked capers
  8. You now have a delicious meal of Buttered Asparagus and Lemon Sole – bon appetit!
