Cotswold Butter Jam Biscuits

Made with the finest ingredients, including the rich creaminess of Cotswold Butter, the subtle sweetness of caster sugar, and the raspberry jam adds a burst of fruity goodness!

Ingredients:

  • 250g Cotswold Butter
  • 100g Caster Sugar
  • 1 Lemon (zest)
  • 350g Plain Flour
  • 2 tbsp Milk
  • 100g Raspberry Jam (seedless)
  • Icing Sugar (to dust)
  • Cookie Cutters

Instructions:

  1. Cream the softened butter, caster sugar and lemon zest until light and fluffy.
  2. Sieve in the flour and add the milk, then combine to a dough.
  3. Wrap the dough in cling-film and chill for 30 minutes.
  4. Preheat the oven to 180°C/Gas mark.
  5.  Sprinkle some extra flour onto a board and roll out half of the dough until it is 3mm in thickness.
  6. Using the large cutter, cut out as many biscuits as you can.
  7. With a heart shaped cutter, cut out a heart in half of the biscuits.
  8. Transfer the biscuits onto the lined tray and bake for 12 minutes.
  9. When cool, spread jam onto the whole biscuit shapes and place a cut-out heart shape on top.
  10. Dust with icing sugar and enjoy!
