Ultimate Lemon Meringue Pie Recipe

Ingredients:

For the pastry:

  • 100g Cotswold Butter, diced
  • 200g plain flour
  • 25g icing sugar
  • 1 large free-range egg yolk

For the filling:

  • 40g Cotswold Butter, diced
  • 5 lemons
  • 40g cornflour
  • 150g caster sugar
  • 4 large free-range egg yolks beaten

For the meringue:

  • 4 large free-range egg whites
  • 2 tsp cornflour
  • 225g caster sugar

Method:

Step 1: Preheat your oven to 200°C

Step 2: Start by sifting your flour and icing sugar into a mixing bowl. Rub the Cotswold Butter into the flour mixture. Mix the egg yolk into the flour-  add cold water if necessary. Gently work together until it forms a dough. Form a ball, wrap in cling film and put in the fridge for at least 30 minutes.

Step 3: Once the pastry has been chilled, roll out the pastry on a lightly floured surface. Line a 2.5cm deep flan tin. Press the pastry well into the tin and trim off any excess pastry. Fill the pastry case with baking paper and baking beans for 15 minutes. Remove the paper and beans and cook for a further 10 minutes until it is golden brown.

Step 4: While the pastry is baking it’s time to make the filling! Mix cornflour, golden caster sugar, Cotswold Butter and lemon zest in a saucepan. Gradually add the lemon juice and mix until smooth Keep stirring vigorously for a few minutes, until the mixture thickens. Take off the heat and set aside while you male the meringue.

Step 5: When ready to bake, preheat the oven to 150’c . Spoon lemon mixture onto the pastry case. Next spoon on the meringue filling, swirl and peak it as you wish . Bake for 30 minutes until the meringue is set and crisp on the outside. Leave to cool before serving!

Step 6: Serve and enjoy!
