Whole Butter Chicken

For most people, a perfect Sunday afternoon usually includes a roast dinner and then lounging on the sofa for the rest of the day. Our whole butter chicken recipe will be the highlight of your weekend, and will definitely be a showstopper if you’re hosting the Sunday roast. Ingredients:

  • 60g Cotswold Butter
  • 1 whole chicken
  • 4 garlic cloves
  • ¼ cup of white wine
  • 3 tablespoons of olive oil
  • 1 lemon
  • 3 rosemary springs
  • 2 tablespoons of chopped parsley

Method:

  1. Preheat your oven to 200°C
  2. Line a baking tray with foil, or lightly grease a roasting pan with butter.
  3. Place the chicken on the baking tray, pour the olive oil, melted butter, wine and juice of half a lemon over the chicken under the skin and inside if possible.
  4. Season the chicken with pepper and parsley.
  5. Rub the minced garlic on the chicken and ensure all ingredients are now evenly mixed on the chicken.
  6. Put the rosemary sprigs and squeezed lemon halve into the chicken cavity and tie the legs together.
  7. Roast the chicken in the oven for 1 hour and 15 minutes, check the chicken halfway through cook time and bast if needed.
  8. Remove from oven and leave to stand for 10 minutes before serving
  9. You now have delicious whole butter chicken to enjoy – bon appetit!
